Easy Applesauce Muffins

These are one of the tastiest and easiest muffins that I’ve ever made! I have made these in regular muffin tins and the ones photographed were baked in a mini muffin pan, both ways work phenomenally! If you thought a pancake mix is only good for pancakes you’re really underestimating the power of a simple mix. This recipe is made from my feather-light pancake mix, which no worries I will provide a quick substitute if you don’t have the mix already made, but boy is this one mighty treat!

I don’t think any other muffin recipes were nearly as moist as these tiny little snacks! These are one of the best and you won’t even taste the applesauce in these muffins! Each muffin is super moist and the cinnamon sugar coating is like the icing on a cupcake! It gives these applesauce muffins a kick of cinnamon and the crunchy sugar topping gives each muffin an extra crunch! Then dipping each muffin into melted butter before it gets topped with the cinnamon mixture just makes one of the moistest concoctions!

The mini applesauce muffins are the perfect size for an after school snack or just something to pop in your mouth when hunger strikes. I especially think the bigger standard size muffins are perfect for breaking apart and slathering butter over each half!

Applesauce Muffins:

  • 4 Tbsp butter

  • 1/4 cup sugar

  • 1 cup Feather-Light Pancake Mix* (see quick substitute below)

  • 1 egg

  • 1/2 cup applesauce

  • Pre-heat oven 350°F. Lightly spray a mini muffin tin.

    Cream the butter and sugar. Then mix in the eggs, applesauce, and pancake mix.

    Fill each muffin tin with 1 Tablespoon of the muffin batter. Bake 11 minutes.

    Stir together the cinnamon and sugar. In a separate bowl melt the butter. Dip each muffin in melted butter then the cinnamon-sugar mixture. Serve.

Notes

Quick Pancake Mix Substitute:mix together 1 cup flour, 2 T sugar, 1/4 tsp salt, 3/4 tsp baking soda.

To Make Standard Size Muffins:double the recipe to fit a standard-sized muffin pan.

Margarine or shortening can be used for making muffins, however, butter has more flavor. I also think vegetable oil can be used too since that seems to work out just fine like when I made these brownies with oil instead of butter!

Will a regular size muffin tin work?

This recipe was made in a mini muffin tin, however, if you wish to use a standard size muffin tin, double the recipe. The baking time will also vary as you may need to bake for 20 minutes instead of 11 minutes.

I don’t have a pancake mix can I still make these muffins?

Absolutely! I have scaled down my feather-light pancake mix just for this recipe! You can find the quick substitute in the recipe card.

How to store muffins?

Since muffins are in the bread category, they are best stored at room temperature. To save for a later time consider freezing them.

Room temperature:keep cooled muffins in an airtight container or gallon-sized ziplock bag with a zipper to seal any air out and keep the muffins moist. If your muffins are still warm, layer the muffins between paper towels to absorb any extra moisture and prevent the muffins from getting soggy. Storing muffins in a bag or an airtight container will help the muffins from drying out and getting hard.

To Freeze:Allow the muffins to completely cool before placing them into a gallon freezer bag. You can flash freeze the muffins on a cookie sheet first, but I find freezing individual baked goods like muffins don’t clump as much. Place into a freezer ziplock bag and freeze up to 3 months.

How are Applesauce Muffins made?

Prep:Turn on the oven and lightly spray a muffin tin.

Batter:In a large bowl cream the butter and sugar until light and fluffy. Beat in the egg and applesauce, then the dry ingredients. Mix well to create a batter. The batter will be slightly thick but easy to scoop.

Bake:Using a tablespoon spoon the batter into the muffin tin filling each tin 2/3 full. Bake for 11 minutes.

Topping: Meanwhile, stir the sugar and cinnamon together. Melt the butter in a microwave-safe bowl. Once the muffins are easy to handle and not too hot; dip each muffin top into the melted butter then the cinnamon sugar topping.

Muffin Tin:To fit these applesauce muffins into a standard size muffin tin double the recipe.

Can I use cupcake liners?

I don’t like to use cupcake liners for muffins. They just don’t seem to peel off easily and seem to stick to the liners when making muffins. On the other hand, I do like liners for cupcakes but haven’t tried using liners for these applesauce muffins yet. I am realizing some muffin recipes don’t do well with liners and perhaps that’s because they are more doughy or lacking fat content than cupcakes.

Some muffin recipes will do great with liners and some don’t. If you have a good amount of fat content lightly spray the liners before using. If you are making healthy muffins they can tend to stick more since they sometimes lack fat or sugar and sometimes even with the addition of more grains like oatmeal.
