Garlic Cheese Bread (Rolls) Recipe (1)

My family loves this homemade garlic bread. We are all very much into garlic, cheese and bread (and who isn’t?). I can always be convinced to make these rolls to go along with dinner.

This cheese garlic bread recipe is a little more labor intensive than my Garlic Knots, or my Red Lobster Biscuits but is absolutely worth it. They are so soft and buttery and I love serving them to my family and friends.

Pulling these hot rolls out of the oven is dangerous! It’s so hard to resist just grabbing one (or two) and snarfing right on the spot.

If you don’t need a full dozen, you can always bake half the batch and freeze the rest and bake another day when you need garlic rolls. Check out the Notes box below for tips on freezing this recipe.

What to serve with Cheesy Garlic Bread

These rolls pair exceptionally well with pasta dishes like Ravioli Lasagna and Baked Ziti, and can be balanced by healthier sides like Arugula Salad or a Kale Salad.

Kitchen Hack

I use a repurposed cheese shaker filled with flour to flour my counter tops. Means an even sprinkle and no mess!

Why you’ll love this recipe:

  • These rolls are perfect for family dinners.
  • Easy to make (don’t be afraid of yeast!)
  • Make ahead! Bake some now, some later. You choose!

I have included step-by-step photos and instructions, as well as tips and tricks in the post. If you’d rather skip all that, scoot right on down to the full recipe card located at the bottom of the post.

Kylee’s Notes

What to do with leftovers

Baked rolls are good for a few days on the counter. A quick zap in the microwave to make them soft and melty again will work wonders.

Substitutions/Additions

Add some cooked and crumbled bacon to the rolls with the cheese. You won’t regret it.

Caramelized onions are epic in this, too. You can also add a small amount of diced onion (red or white/yellow is fine) instead if you prefer.

You can use any kind of cheese that you like. I like cheddar cheese for the strong flavor, but a little swiss (maybe add some ham, too) is a fun and yummy idea and a great way to mix it up.

Freezing instructions

This recipe can be frozen before baking.

Make the rolls to the step where you have rolled and cut them, and place them in the freezer before you allow them to rise.

I put them on a baking sheet and freeze separately from each other until solid (flash freezing), then put them in a ziplock bag and freeze.

On the day you want to serve, take as many rolls as you’d like to serve, and add them to a baking dish brushed with olive oil or butter. Allow to thaw/rise for 4-5 hours and bake as written.

Do you saute the minced garlic or does it cook in the oven?

      Hi there
No need to saute before using – it blends with the butter and dough and cooks. And is delicious.

These were delicious! We all liked them and I’m making more tomorrow for a birthday dinner. They are a perfect late night snack warmed and dipped in tomato sauce. Thanks for this recipe!

The rolls were soft and fluffy. There was a subtle garlic flavor and cheese throughout the rolls. I spread a little bit of butter on a hot roll and it was amazing! We managed to keep them in a container for 4 days and enjoyed them throughout the week. They were great with the soup but I also enjoyed them with a salad and just for a snack.

FAQs

Why are my homemade dinner rolls hard? ›

Too much flour, or not the right kind, could be to blame. Dough made only from flour with a high or even average amount of protein (like bread flour or all-purpose flour) can become tough from overmixing. Protein gives bread structure in the form of gluten—the more you mix and move the dough, the more gluten you get.

How to bake store bought rolls? ›

The best method for reheating dinner rolls is in the oven. To reheat dinner rolls in the oven, preheat it to 350°F. Place the rolls in a baking dish or on a baking sheet, brush with melted butter. Bake until warm, 7 to 10 minutes.

How do you keep your rolls soft when baking? ›

Melt the butter and brush it over the risen dinner rolls. This helps the tops to brown and keeps the crust soft. Bake the rolls 15 to 18 minutes.

How do you keep homemade rolls from drying out? ›

Refrigeration pulls moisture from bread, which speeds up the staling process and causes the bread to dry out. For longer storage, freeze the bread. Most yeast breads and rolls freeze well. To freeze, wrap securely in aluminum foil, freezer wrap or place in freezer bags.

Why do you put water on bread before baking? ›

The use of water vapour when baking bread and rolls is very important as it gives the crust a nice shine and makes it perfectly crispy. The crust would turn out grey and hard without water vapour.

What is the trick to fluffy bread? ›

Add Sugar

Adding sugar weakens the gluten structure, absorbs water, and eventually makes the bread lighter and softer. As a result, sugar improves the bread's taste, structure and texture. Yeast also eats up sugar to produce carbon dioxide, which raises the dough and makes bread fluffy.

How do you know when homemade rolls are done? ›

The internal temperature of a loaf of crusty yeast bread when it is cooked to perfection should be 200 to 210 F. Soft breads and dinner rolls should be 190 to 200 F. The bread will pull away from the sides of the pan and will feel firm to the touch. The bread will sound hollow when you tap it lightly.

What do you put on rolls before baking? ›

Egg wash: Either egg yolk (to aid in browning), egg white (to add shine), or whole egg wash (for both) can be brushed onto the surface of proofed rolls before baking. I mix the egg with a tablespoon or so of water to help it achieve a brushable consistency.

How do you make store-bought rolls taste like homemade? ›

Try sprinkling herbs over the warmed rolls, or cracking some salt over them. One of our favourite ways to uplift a store-bought dinner roll is to drizzle some olive oil over them for instant Mediterranean flair!

Why are my rolls dense and hard? ›

There may be several reasons for a dense, cake like texture in bread. It may indicate the kneading wasn't enough for the gluten to develop properly, or the dough was proved for too short a time or the dough may have been too dry. It is also worth checking the flour you used.

Why are my bread rolls not soft? ›

Hard crusts/bread/buns etc means that you are either baking on too low heat and for too long, OR the dough you started off with was not kneaded well enough. So inshaAllah next time when you knead the dough, follow these tips: 1. Make sure the water/milk you use for kneading the dough is warm.

Why did my yeast rolls come out hard? ›

Too much flour makes yeast dough too stiff to rise correctly. Be careful measuring flour. When flour is "scooped" into the measuring cup directly from the container, it compresses or becomes packed. This means you will be adding more flour than called for in the recipe.
