As likemost of you, I began the year seeking ways to be healthier. My youngest, Baby Ro, just turned 10 months and up until now I haven’t put in a real effort to get my body back to it’s pre-pregnancy shape. I don’t necessarily want to lose weight as much as I want to eat healthier and get a little more active to feel more energized. Lack of time is usually the culprit for preparing healthy meals but in reality, there are many healthy recipes that are quick and easy to prepare and packed full of nutrition, like these Sunshine Egg Cups.

I love recipes I can make ahead and pop in the fridge or freezer for a healthier snack alternative to the usual packaged goodies. It makes me feel good as a mom that I’m providing much needed vitamins and nutrients to my kids as healthy choices when they come home with extremely healthy appetites. These Sunshine Egg Cups are perfect for the lunchbox too. No matter if you’re whipping off to work or packing the kids lunches, these makes for a filling energy boosting addition.

As you can likely tell, my muffin pan is well used. I love it. I use it all the time to make individual meal or snack ideas. These Sunshine Egg Cups are extremely versatile; make it a fun activity with the kids for an egg fondue by allowing everyone to add their own ingredients that they like and everyone will be satisfied.

I added avocado, cheddar cheese, garlic, salt and pepper to my Burnbrae Farms eggs to make these. They remind me of sunshine on a cloudy day. TheOmega 3 shell eggshave more essential nutrients and Omega 3 fatty acids which enhances the rich yellow yolk; it’s like an energy punch all in one. You can add bacon, or sausage to these to include an extra dose of protein or if you are worried about the carbs, you can replace the bread with a couple slices of your favourite deli meat.

Serves: 12

Ingredients

  • 12 slices of bread
  • 12 eggs
  • 1 avocado, diced
  • 1 clove of garlic, chopped
  • ½ cup cheddar cheese, grated
  • salt
  • pepper

Instructions

  1. Preheat oven to 350 F.
  2. Spray a muffin tin with cooking spray and press one slice of bread into each muffin cup, shaping the cup.
  3. Sprinkle a little garlic into each cup.
  4. Crack 1 egg into each cup, placing pieces of avocado around the yolk.
  5. Sprinkle the top of each cup with a little salt, a little pepper and a little cheddar cheese.
  6. Bake at 350 F. for 25 minutes.
  7. Remove from each cup using a spoon. Serve warm or store in the refrigerator or freezer for later.
