This snickerdoodle blondie recipe has to be one of my all-time favorites. It is so easy to make and the flavor tastes exactly like its cookie cousin. Full of cinnamon flavor with a soft and chewy texture. Since the batch bakes in a 9×13 pan it is ideal for sharing. It is the perfect combination of snickerdoodle cookies and brownies!

Snickerdoodle Blondie Ingredients:

Say hello to your new go-to treat for every holiday event! Be prepared to share the recipe, as I am constantly asked for it! Best of all? These snickerdoodle brownies are made with pantry staples which means you probably have everything you need on hand already!

  • Butter: I like to use salted butter for bars and brownies, but unsalted will work too.
  • Sugar: Both light brown sugar and granulated (white) is used in the batter. It gives you the a slight hint of molasses that really kicks these up a notch. Don’t forget a little white sugar for the topping.
  • Large Eggs and Vanilla Extract- Be sure to use pure vanilla extract and shy away from imitation to avoid that processed flavor.
  • All-Purpose Flour and Cornstarch- Alternately, you can use cake flour in place of the all-purpose and cornstarch.
  • Baking Powder- Be sure that your baking powder is fresh to get that light and fluffy bar texture.
  • Salt, Cinnamon, and Nutmeg- All of the flavors to help give these bars that classic snickerdoodle taste.

How to make Snickerdoodle Blondie Bars:

  1. Preheat the oven to 350 degrees. Line a 9×13 pan with parchment paper and set aside.
  2. Combine the butter and sugar in a mixing bowl. Mix until combined and slightly fluffy, about 2 minutes.
  3. Scrape the sides of the bowl and add the eggs, egg yolk, and vanilla. Continue to mix until fully incorporated, about 1 minute.
  4. In a separate bowl, whisk together the flour, cornstarch, baking powder, salt, cinnamon, and nutmeg.
  5. Stir the dry ingredients into the wet ingredients until just combined.
  6. Spread the batter into the prepared pan.
  7. Combine 1 tablespoon of sugar with 1 tablespoon of cinnamon. Sprinkle evenly over the top of the batter.
  8. Bake 25-30 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool and enjoy.

Ingredients

  • 1 cup butter softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs + 1 egg yolk
  • 2 teaspoons vanilla extract
  • cup all-purpose flour
